Vegan Banana Bread for World Vegan Day!

 

Virtually virtuous vegan banana bread! (or muffins!)

  • 3 x very ripe large bananas 
  • 2 TBLS Chia Seeds 
  • 6 TBLS Water 
  • 140g Self-raising flour 
  • 100g Wholemeal flour 
  • 1 tsp Baking Powder 
  • 1 tsp Bicarb Soda 
  • 3 TBLS Agave Syrup (could substitute for Maple Syrup or Honey) 
  • 1 TBLS Brown Sugar 
  • 2 tsp Cinnamon 
  • 0.5 tsp Vanilla Extract 
  • Dark Chocolate Chips (optional)
  • Drizzle of oil (rapeseed/ sunflower) 
  • Pecan / Walnuts chopped and sprinkled on top (optional)

 

  • Pre-heat oven to 170′ C 
  • Soak Chia seeds in the water for 15 – 20 minutes until it forms a paste 
  • Line baking tin with baking parchment 
  • Mash bananas and add all wet ingredients inc. chia mixture 
  • In another bowl add all flour and other dry ingredients 
  • In small sections add the wet bowl into the dry mixture and stir well until fully combined. 
  • Add chocolate chips  
  • Pour into tin (or muffin cases) and add chopped nuts, sprinkled on top  
  • Bake for 40 minutes approx. (check with a skewer if it comes out clean it is done)
